Classification
Standard, select, choice and prime
Here are our different quality designations.
Standard Beef
Standard has a very low fat content and less marbling than beef from the other classes, and is often sold at slightly lower prices. Consider which cooking method you use to achieve a good result in the final product when it is cooked. Standard is suitable for stew and slow cooker recipes that make it less tough; grilling or frying can result in meat that is somewhat dry and chewy.
Select Beef
Select beef is leaner than Choice and tends to be a little less tender and juicy. Consider which cooking method you use to achieve a good result in the final product when it is cooked. Select is suitable for stews, slow cooking, and low-temperature cooking; grilling or frying can result in somewhat dry and chewy meat.
When we talk about pork, veal, and lamb from Select, it is a good, high-quality grade because we do not grade these species by marbling and tenderness as we do with beef.
Choice Beef
Choice beef has a good amount of fat marbling, although less than Prime. It can usually be cooked with either dry or moist heat without becoming dry and tough. Choice is an excellent budget-friendly alternative to Prime. You can grill and fry this meat with very good results.
Prime Beef
This is the highest beef grade with the most visible fat marbling. This meat is very tender and makes up a small portion of all graded beef. Because Prime has such a high degree of fat marbling, it is excellent for dry-heat cooking methods including frying and grilling.
