Calf thymus is an exclusive and very tender delicacy that comes from the calf's thymus gland. The meat has a mild, slightly sweet flavor and a creamy, almost buttery texture. It is often used in fine cooking, usually lightly blanched and then fried or grilled to achieve a golden surface while the inside remains tender and juicy.
The veal we offer comes from animals that are raised and slaughtered within the EU. Production follows the EU’s common regulations for animal welfare, feed and food safety, which means requirements for proper care, supervision and rearing conditions throughout the entire chain. The calves are raised under controlled conditions and fed according to established rules that ensure both animal welfare and meat quality.
