Calf kidney with fat is a classic offal cut from veal, where the kidney remains attached with its natural protective fat (kidney suet). The meat is very tender, finely fibrous, and has a milder and more delicate flavor than kidney from older cattle. The fat adds juiciness and rounds out the flavor during cooking. Calf kidney is often used in traditional dishes, for example fried with onions or in stews, and is appreciated for its rich flavor and quick cooking.
The veal we offer comes from animals that are raised and slaughtered within the EU.
