Veal heart sweetbread is an exclusive and very tender cut from the calf’s thymus gland (sweetbread), more specifically the heart sweetbread located near the heart. It has a light color, fine grain, and a mild, slightly nutty flavor. Sweetbread is rich in fat and gelatin, which gives a creamy and juicy texture when cooked. It is often used in classic French cuisine and is prepared gently by blanching followed by frying or browning in butter.
The veal we offer comes from animals that are raised and slaughtered within the EU. Production follows the EU’s common regulations for animal welfare, feed and food safety, which means requirements for proper care, supervision and rearing conditions throughout the entire chain. The calves are raised under controlled conditions and fed according to established rules that ensure both animal welfare and meat quality.
