Tenderloin is the most tender and most exclusive cut of beef. It runs along the spine on the inside of the animal and is a muscle that is used very little, which gives it its characteristic softness.
The meat has a fine grain structure, a mild flavor, and very low fat content, and is excellent for quick cooking methods such as pan-frying, grilling, or for fillet medallions. Tenderloin is often served pink to red for the best flavor and juiciness.
