Chuck core is the leaner, central part of the chuck (from the shoulder/front quarter of cattle). It has a coarse fiber structure, deep beef flavor, and slightly less connective tissue than regular chuck.
It is especially well suited for slow cooking such as stews, braising, and pulled beef, but can also be used for mince when you want a lot of flavor.
