Skirt steak is a long, thin, and coarse-fibred cut of meat that comes from the diaphragm of cattle. It has a lot of flavor thanks to its high fat content but can become tough if cooked incorrectly. Skirt steak is best quickly grilled or seared over high heat and should always be sliced against the grain. Common in Tex-Mex dishes such as fajitas.
