Teres Major is a small, tender, fine-grained muscle from the beef shoulder (shoulder area). It is sometimes called "petite tender" and is, after the tenderloin, one of the most tender cuts on the animal. The meat has a mild flavor, low fat content, and is excellent for grilling or cooking whole, preferably quickly over high heat and served pink.
